- 手作英式司康[British Scones]
- 材料 [Ingredients]
- 低筋麵粉225g [low-gluten flour]
- 奶油65g [Butter]
- 牛奶150g [Milk]
- 全蛋一顆 [An egg]
- 檸檬汁10g [Lemon Juice]
- 糖30~35g [Sugar]
- 泡打粉8g [Baking Powder]
- 葡萄乾 (可加可不加) [Raisins (with or without)]
- 作法 [Recipe]
1.在牛奶加入檸檬汁 [Add lemon juice into the milk to be the Yogurt]
2.泡打粉+糖粉+鹽+麵粉 [Baking Powder+Sugar+Salt+Flour]
3.奶油分成小塊加入並攪拌均勻成小顆粒
[Cut the butter smaller, and mix it into small pieces]
4.加入2/3的蛋液,分次加入1.
[Add 2/3 of egg ,and add 1. in batches]
5.酸奶加到麵團呈溼黏狀就可以了
[Yogurt is added to the dough until it is moist and sticky]
6.將麵團用保鮮膜包起來,冷藏30分鐘
[Wrap the dough in plastic wrap and refrigerate for 30 minutes]
7.在桌上和麵糰上撒麵粉,用重複折疊的方式,盡量避免揉捏麵團
[Flour the table and the dough, use repeated folds to avoid kneading the dough]
8.撒上葡萄乾在麵團上,繼續摺疊麵團 (葡萄乾可加可不加)
[Sprinkle raisins on the dough and continue to fold the dough (raisins can be added or not)]
9.用圓形模型壓麵團(我是用米杯),厚度約2~3公分
[Press the dough with a round model (I use a rice cup), the thickness is about 2~3 cm]
10.在表面刷上剛才剩餘的蛋液
[Brush the surface with the remaining egg wash]
11.烤箱220度烤15~20分鐘
[Bake in the oven at 220 degrees for 15-20 minutes]
12.大功告成! [Finish!]
